One Pan, High Protein Chicken Yakisoba (>60g Protein!)
I’m usually not one who can eat the same thing for days. It’s usually after 2 consecutive days when I’m ready to toss what I saved in the fridge because I just crave variety! Meal preps never work for me, but this one pan Chicken Yakisoba? I was more than okay eating it for 3 days straight.
This Japanese stir fried noodle dish packs a huge amount of protein per serving. For the ingredients I used, I’m confident it’s over 60g! This is one of the reasons why I’ll gladly eat this day after day as well, there’s not many dishes with this amount of protein that is so delicious & easy to eat.

Cook time: 10 - 15 minutes
Serves: 2 - 3 pax
Ingredients
For the noodles and protein:
90g dry egg noodles
400g chicken breast/thighs, sliced into strips
For the sauce:
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp mirin
3 tsp Worcestershire sauce (or 2 tsp ketchup + 1 tsp rice/apple cider vinegar)
1 tbsp water
For the vegetables:
1 white onion, sliced
1 carrot, cut into matchsticks
1/2 cabbage, sliced thin
100g shiitake mushrooms, sliced
Spring onions, cut into long strips
You'll also need:
3-4 tbsp neutral oil (I used avocado oil)
More soy sauce, oyster sauce, salt or sugar to taste
Method
Get your noodles sorted first: Cook the egg noodles according to packet instructions, then drain, rinse with cold water to stop the cooking process and set aside.
Mix up your sauce: Mix the soy sauce, oyster sauce, mirin, water and Worcestershire sauce in a small bowl. Doing this first helps to incorporate the sauce more easily later because the pan will be loaded. Also note that you don’t have to pour everything at once into the pan! Add a little, stir fry, taste test and adjust again.
Cook the chicken: Heat 2 tablespoons of oil in a large pan medium-high heat. Add the chicken strips and cook until they're golden and cooked through - about 5-6 minutes. I added a bit of soy sauce to them. Remove from the pan and set aside.
Get the vegetables going: Add the remaining oil to the same pan. Add the mushrooms and cook for about 2-3 minutes until they start to soften, then add the onions, cabbage, and carrots. Stir-fry everything for another 4 - 5 minutes until the cabbage is wilted but still has a bit of crunch.
Bring it all together: Add the cooked noodles and chicken back to the pan, pour over your sauce, and toss everything together. This is the satisfying bit - watching it all come together and smell absolutely incredible. Remember not to add all the sauce mixture at once! You might need to add more soy sauce, salt or sugar after taste testing. It depends on the ingredients you have used.
Finish it off: Add the spring onions and give it one final toss. Serve and enjoy!~
High Protein, One Pan Chicken Yakisoba
This is essentially a stir-fry noodle dish. What sets it apart from Chinese stir fried noodle recipes is the addition of Worcestershire sauce. I did not have the sauce on hand and could not find good options in the supermarket, so I chose to use the substitute sauces instead. I’m all for using what you have and not buying a bunch of new pantry items you’ll only use once, so improvise if you need:)
I also did not find a yakisoba noodle I like at Don Don Donki, so I settled for chinese egg noodles. I like this better only because it is made with cleaner ingredients. At the end of the day, yakisoba noodles are made of wheat as well, and the addition of egg to make it egg noodles gives this dish a higher protein content, so that’s a win for me!
