15 Minute Oven Magic: Spicy Miso Salmon Don

As much as my husband & I love to cook, we’re also humans who need to preserve our sanity on weekday nights😂 Most days, you won’t find us slogging over the stove for dinner because we absolutely need a healthy amount of TV time to decompress after a long work day before the whole cycle repeats itself again and we find ourselves back to work the next day.

The thing is, I hate putting my body through what it does not deserve just for convenience. So we don’t order in or eat out - this is reserved for special places that know what they are doing. We’re not gonna waste our health or calories frivolously😕 So because of this predicament I admit I have put us in, we have become so good at 15 - 30 minute recipes to help us survive weekday dinners at home!

Cook Time: 10 minutes
Serves: 1

Ingredients

  • 200g salmon portion, cubed

  • 1 tbsp red miso (white miso is fine too)

  • 1 tbsp warm water to dissolve miso

  • 1.5 tbsp light soy sauce

  • 1 tbsp honey

  • 2 tbsp hot sauce (I used peri-peri sauce, sriracha works too)

To serve it as a balanced bowl:

  • Rice (I used overnight purple rice! Which we bulk cook a few times a week)

  • Sliced avocado

  • Sliced cucumber

  • Furikake

  • More hot sauce (optional)

Method

  1. Preheat your oven: Set to 200°C. While it's heating, you can prep everything else!

  2. Make your magic sauce: In a small bowl, mix the miso paste and warm water until smooth. Add the soy sauce, honey, and hot sauce, stirring until completely combined. Taste and adjust to your preference!

  3. Prep the salmon: Cut fish into cubes and then add about 2 tbsp of sauce mixture to a bowl with the salmon cubes. Mix well. I like to add more sauce to the salmon while it’s halfway cooking in the oven, so I don’t use all the sauce I’ve mixed.

  4. Oven prep: Place the cubed salmon on a baking tray lined with parchment paper.

  5. Let your oven work: Pop the tray in the oven for 10-12 minutes, or until the salmon is cooked to the doneness you enjoy. After about 5-6 minutes, I switch my oven mode to Grill so the surface of the fish can char a little, but this is optional. Feel free to add more sauce at any point of the oven cooking process, the more you add, the more flavourful your salmon will be. I recommend doing this just once!

  6. Assemble your bowl: Add rice to a bowl, top with the glazed salmon pieces, and garnish with sliced avocado, cucumber and a sprinkle of furikake. I love spicy food so I added more hot sauce!

  7. Serve immediately: Enjoy your minimal-effort, maximum-flavour balanced bowl!
