Mediterranean-inspired Balanced Bowl (Stoveless recipe!)
This mediterranean-inspired balanced bowl is perfect for those who think they are not good in the kitchen, because this recipe doesn’t involve turning on the stove AT ALL!
So even if you’re great in the kitchen, this is going to be an easy, low clean up recipe that will save you lots of time and effort at the end of a long work day:)
Prep time: 10 - 15 minutes
Cook time: 25 minutes (passive in the oven)

Ingredients
Quick cooking doesn’t involve any measurements so I’m skipping them this time. It’s really just sprinkling and squeezing common pantry items, so just cook with your heart/intuition:) If you’re afraid of over-seasoning, add less than you think because you can always add more salt and seasonings once the chicken is cooked, but you can’t really subtract what’s added.
2 x 200g boneless chicken thighs (they cook faster, go for skinless for less calories)
Extra virgin olive oil
Chicken seasoning or garlic powder, onion powder and paprika
Dried mixed herbs
Salt
Sugar (optional, or you can use a bit of honey)
Black pepper
Cayenne pepper (optional)
Method
Preheat oven to 190ºC
Season chicken thighs with all the wet ingredients, then rub the dry ingredients all over. Bake for 20 - 25 minutes if using boneless chicken thighs, add 5 - 10 more minutes if using bone-in.
Then start to prep all the other components of the balanced bowl - yogurt dressing, chickpeas, cucumbers & onions
For the yogurt dressing: Combine 2 tbsp of greek yogurt (DO NOT use greek-style yogurt), squeeze of extra virgin olive oil, good pinch of salt, dash of garlic powder and small squeeze of lemon. Taste and adjust as needed:)
For the chickpeas, you can eat them plain, or add a small squeeze of extra virgin olive oil, pinch of salt, paprika or I like adding sumac.
Once the chicken is done, cut it into cubes or strips and add to rice, diced cucumbers & onions and chickpeas. Finish with as much yogurt dressing as you wish!
