Better For You Than Instant Noodles Chicken Bee Hoon Soup

We've never had a single cup or pack of instant noodles in our home for a year, and we don't plan to have any in the future either

Wes & I truly cleaned up our diet in the past year and we've never felt better or fitter than ever. As we're approaching our 30s, I highly believe our daily nutrition is one of the things that set people apart as we age. 

If you're looking for a one pot, super easy & nutritious recipe that you can put together after a long work day, this is it

Prep time: 0 minutes

Cook time: 5 minutes active cooking, total 30 minutes

Serves: 2

Ingredients

• 400g chicken breast (or chicken thighs)

• 2 beehoon servings (or any noodle you like)

• Your choice of veg (I used bokchoy)

• 1-2 tbsp ikan bilis stock powder

• 1 tbsp crab & anchovy sauce (or soy/fish sauce)

• Serve with fresh cut chilli padi & fried shallots

Method

• Boil a pot of water, do not fill till its too full but enough to submerge the chicken breasts

• Once the water is boiling, add chicken breasts and let it come to boiling temperature before lowering the heat to medium-low. Make sure the chicken breasts are fully covered with water

• Set timer for 25-30 minutes. I like leaving my pot uncovered so I don't have to worry about water overflowing

• Cut & wash vegetables and prep other ingredients (such as making your fried shallots if necessary) while waiting

• After 30 minutes, set aside chicken breasts to cool on a plate

• Rinse the pot and start boiling fresh water in the pot again. I add about 1.2 - 1.5 litres of water, depending on the size of the pot. The reason we don’t cook the soup at the same time as chicken breasts is because a lot of impurities will be released as the chicken cooks, following these steps helps to maintain a clear soup!

• Add ikan bilis powder and crab & anchovy sauce. Taste and adjust seasoning as needed.

• Boil beehoon and set aside in their serving bowls. Be careful not to overcook them as you'll still be adding hot soup to it later

• Boil vegetables and start assembling the bowl

• Once chicken breasts have cooled sufficiently, shred them with your hands or 2 forks. Add them to the bowls.

• Finish with adding hot soup and garnish with fresh cut chillies & fried shallots. Enjoy!~

This is most definitely a joke, but everytime I finish my bowl of beehoon soup, I'll say this would be my last meal of choice on death row😂
