Korean Spicy & Saucy Dak Galbi (One Pan Meal)
This gem of a dish has everything you need & crave in one - protein, fibre, spicy & saucy!
I can’t be the only one who starts to crave Korean food whenever I’m chasing the latest the K-drama on Netflix. The actors somehow make everything they eat look so delicious and I inevitably find myself planning for meals with Korean flavours🤭 If this is you, I hope you enjoy this quick & easy, one pan meal!

Serves: 2 pax
Ingredients
400g boneless skinless chicken thighs
1 tbsp sugar
1-2 tbsp gochugaru
4 small garlic cloves, minced
2 tbsp rice wine (or 1 tbsp rice vinegar + 1 tbsp Chinese cooking wine)
2 tbsp soy sauce
2 tbsp gochujang
2 tbsp neutral cooking oil (I used avocado oil)
1 medium carrot, cut into thin ovals
1 medium onion, sliced
1/3 medium cabbage, cut thinly
Method
Prep everything first: Cut your chicken thighs into bite-sized pieces. Slice your carrot, onion & cabbage. Get your garlic minced and have all your sauce ingredients ready!
Mix the sauce with chicken: In a large bowl, add chicken thigh pieces then add gochujang, soy sauce, rice wine, sugar, and gochugaru. Give it a proper mix until it's all combined. (Note: I largely followed the recipe by Saemmul and she recommends to marinade the meat for at least 2 hours to overnight(recommended). But I wanted to try this out as an easy, one pan recipe everyone can make at anytime so no waiting for me🙂)
Get cooking: Heat your oil in a large pan or wok over medium-high heat. Chuck in the chicken pieces and let them get properly golden - about 5-6 minutes should do it. Don't move them about too much so some sides can get some caramelisation and flavour!
Add the veg: Toss in your onion, cabbage and carrots. Stir everything up in the pan and cook till the vegetables achieve the doneness that you like! If you love your veg with texture, just several minutes will do since we cut everything thinly for quick cooking.
Finish and serve: This is obviously best enjoyed with a steaming hot bowl of rice, enjoy!~
