🐑 Easy Oven Lamb Chops (Blender Marinade, Low Clean Up)

A popular platter we serve whenever we host our dearest friends — and one of my absolute favourite dishes in the world! Up until last night, we’d never made lamb chops when it was just dinner at home for the husband and me. But that’s going to change, because this recipe is too easy and too satisfying to save just for guests.

This is proof you don’t need to work yourself to the bone in the kitchen to serve something truly worth eating and enjoying!

Ingredients

Marinade

  • 4–5 thyme sprigs

  • 4–5 rosemary sprigs

  • Handful fresh mint

  • 2 tbsp salt

  • Extra virgin olive oil (I use this one — linked here)

  • Black pepper

  • Dried mixed herbs

  • Chilli flakes (as much as you like)

  • 7 garlic cloves

  • 1 tbsp honey (optional extra drizzle after cooking too)

Lamb

  • 24 lamb chops (about 3 racks)

Method

  • Add all marinade ingredients to a blender. Blitz until well combined. As for the exact measurement of EVOO, add enough such that the marinade can drip off the spoon easily – at least this is the consistency we love. You can add more of each ingredient as you blend, so it’s free & easy, largely dependent on vibes!

  • Rub marinade generously over the lamb chops then marinade overnight or at least 6 - 8 hours for best results. The length of time makes a huge difference from our experimentation.

  • Preheat oven to 250°C. Arrange lamb chops on an oven tray (this is the tray I like — linked here).

  • Cook for 10 minutes, flipping halfway through. Adjust time slightly depending on preferred doneness — every lamb rack and oven/other methods of cooking will vary!

  • (Optional) Drizzle a little extra honey over the top before serving – We used hot honey!

Storage & FAQ

  • How long can I store leftovers?
    We don’t really recommend storing cooked leftovers, but raw will do well in the fridge for up to 2 days.

  • Can I BBQ these instead?
    Yes! The marinade works perfectly on the BBQ — just adjust cooking time to your equipment and doneness preference.

  • Do I need a meat thermometer?
    It’s not a must, but it helps take out the guesswork!

  • What should I serve this with?
    Great with salads, warm pita bread, or pilaf rice!
